Green Sauce!
That's what I made for dinner tonight: Creamy Pecorino and Kale sauce.
Here's how you can too!
You'll need:
1 bunch of kale - pureed in your blender with 1/2 cup of olive oil, blend until very smooth.
1/2 pound lean ground beef or turkey (or omit if you prefer it vegetarian)
1 cup grated pecorino
1 tsp dried chilies
1 tsp cumin
1tsp fennel
1 tbsp olive oil
1 clove of garlic, finely chopped
S&P to taste
Juice of half a lemon
Sautee your meat in the 1 tbsp of olive until browned, then add the pureed kale mixture and all the spices. Cover and reduce your heat to medium-low and let it simmer for a couple minutes. Finish off by adding the lemon juice and cheese. Cover again and let the cheese melt and marry with the sauce.
Serve over brown rice.
