Creamy avocado sauce

If you love creamy, rich sauces but want something a little lower in calories, give this sauce a try! Keep in mind, it is raw, so no cooking required! It's also vegan if you choose to omit the feta as a topping.

Creamy Avocado Sauce over pasta



Sauce

4 avocadoes, pitted
1 green pepper
1 jalapeno
4 cloves garlic
1 tsp salt
1/2 cup sunflower oil
1 bunch cilantro

Pulse all of this together in your magic bullet or blender until it is creamy and super smooth. Avoid the temptation to eat it directly from the bowl!

Toppings

2 tomatoes - seeded and diced
1 bunch scallions - thinly sliced
1 cup feta, crumbled
Sambal - a big dollop on top for extra spice

Pasta

Boil your favourite noodle - I used spaghetti.

Top the cooked spaghetti with large dollops of the avocado sauce - and then top with the diced tomatoes, scallions, feta and a big spoonful of sambal.

We were literally licking the bowl eating this last night. Give it a try!
