How to make the *perfect* scrambled eggs
There's a good chance you've been eating over cooked eggs for most of your life. While it is a simple process, it's time consuming and requires patience - not unlike making a risotto.
Here are the ingredients you’ll need to make scrambled eggs for two:
6 eggs
Salt, 1/2 teaspoon
Pepper, 1/2 teaspoon
Chilli flakes, 1/2 teaspoon
Thinly sliced scallions, 1 bunch, half for cooking half for garnish
Tablespoon of butter
(For a fun and unexpected topping: fry some saganaki cheese in Pisco or Grappa.)
Here are the ingredients you’ll need to make scrambled eggs for two:
6 eggs

Tablespoon of butter

Crack the eggs into a bowl, along with your seasoning and scallions and whisk furiously, while a pan heats on high with your butter. Once the pan is hot, pour your eggs in and immediately start stirring not letting any clumps form. Every 5-10 seconds, remove the eggs from the heat, and repeat this process back and forth. Halfway through, lower your heat to medium, and continue the same process of moving the pan on and off the heat, back and forth. You want the eggs to cook very slowly, so that they become creamy and silky, not clumpy and spongy. You'll know they're ready once most of the moisture has evaporated and they've come together in a creamy, cohesive mass. It'll take about 5-7 minutes using this method.
Finish off with more scallions as garnish, and the pan friend Pisco saganaki.
