Recipe: chia and avocado breakfast pudding
It's cool, sometimes we're all basic bitches, and that's ok. Enjoy this pudding that has the texture of a guilty pleasure, without any of the guilt at all:
Chia and Avocado Breakfast pudding
1st layer
1 tbsp chia seeds
4 tbsp water
Let sit a few minutes to create the "gel".
2nd layer
Half of 1 avocado
1 date
1/4 cup of water
Blend until smooth, layer on top of the "gelled" chia
3rd layer
1 tbsp sour cream
1 tspn Manuka honey
Mix together until smooth, layer over top of avocado.
Top with a handful of frozen berries, sunflower and pumpkin seeds and enjoy! This will keep you feeling full for hours, due to the plethora of healthy fats. If you're vegan, omit the sour cream in place of coconut cream.
