It should be illegal how good this is...

As quoted by my husband after last night's dinner!

As promised, please find the recipe below for the ridiculously amazing tasting dinner I made last night.

Ingredients:

2 cups new potatoes, thinly sliced
1 package lean ground turkey
1 yellow onion, chopped
Couple tablespoons of dried tarragon
Couple tablespoons of chili flakes
Half package of bacon - 6 slices chopped, 6 slices reserved
Olive oil
1 cup of crumbled feta
1 jar of artichokes (in oil), chopped

Saute your chopped onion in a few teaspoons of olive oil along with the chili flakes and tarragon. Add your bacon once the onions turn translucent, followed by your ground turkey. Sautee until the turkey is cooked through. Preheat your oven to 375 degrees (F). Coat a shallow baking dish with some olive oil, and begin by putting a layer of the sliced new potatoes. Follow with a layer of the turkey mixture, a layer of artichokes, feta and continue layering until all your ingredients are gone. Complete the whole ensemble by covering the casserole with your remaining slices of bacon, ensuring it is all sealed and covered. Bake for 1 hour, covered, and remove the lid with 15 minutes remaining to crisp up the bacon.

Holy moly there are no words to describe how good this was! We nearly finished the whole pan. Certainly not my most healthy of dishes, but hey, you only live once!
