Kale and Quinoa Salad
I threw this together for a quick lunch but it will also be perfect for dinner tonight to pair with some chicken or shrimp.
1 bunch of kale
Handful of kalamata olives
Handful of green pimento olives
Half cup crumbled feta (I use light)
2 cups cooked quinoa
1 cup artichokes (from the jar)
Olive oil
Juice of one lemon
1 garlic clove, chopped
Salt and pepper to taste
Roughly chop all your veg, add your your cooked quinoa, garlic, lemon juice, a few drizzles of olive oil and finish by seasoning to your liking with the salt and pepper.
There you go! A perfectly healthy and delicious lunch that will provide you with leftovers for a few days.
